Walking through the historic streets of Prague, the smell of caramelized sugar and warm dough is hard to miss. Follow it, and you’ll likely find one of the city’s most popular street desserts—chimney cake, known locally as trdelník.

It’s one of those foods that immediately stands out.

The dough is wrapped around a metal cylinder, then slowly rotated over an open flame until it turns golden brown. As it cooks, it’s coated in sugar, which caramelizes on the outside to create a slightly crisp, sweet crust.

Once it’s done, the cake is slid off the cylinder, leaving behind its signature hollow center—giving it that distinctive “chimney” shape.

Freshly made chimney cake is best eaten warm. The outside is lightly crisp and sugary, while the inside stays soft, fluffy, and slightly chewy. It’s simple, but the texture contrast makes it incredibly satisfying.

Traditionally, it’s served plain or coated with cinnamon sugar, but modern street stalls have taken it further. You’ll often see versions filled with soft-serve ice cream, Nutella, whipped cream, or fresh fruit—turning it into a more indulgent dessert.

As you walk through busy areas like Old Town Square, you’ll see these pastries being made right in front of you. Watching the dough slowly rotate over the heat, picking up color and texture, is part of the experience.

Even though chimney cake has become popular with tourists, it still holds its place in the street food scene. It’s quick to grab, easy to eat while walking, and perfectly suited to colder weather when something warm and sweet is especially appealing.

The taste is comforting and familiar—sweet, slightly smoky from the cooking process, and rich without being too heavy. It’s not overly complex, but that’s part of its charm.
